Ingredients:
For Dough:
*300g all-purpose-flour *226g unsalted butter (frozen)
*50g sugar *60ml ice water
*1g (1tsp) salt
For Filling:
*700g peaches *15g lemon zest
*50g sugar *30ml lemon juice
*2tbsp flour or cornstarch *dash of cinnamon or nutmeg or both (optional)
Egg wash:
*1 egg
*1tbsp milk or water
Directions:
In a bowl, mix peaches, sugar, flour, spices,lemon zest, and lemon juice until well combined. Set aside.
Combine flour, sugar, and salt. Add in cubed butter and knead with hands or dough scraper. Add in water little at a time until dough holds together. Place dough onto saran wrap, forming it into a disk before placing it in the fridge to rest for about an hour.
Once dough has been chilled, preheat oven to 218°C or 425°F. Using a little bit of flour, dust your workspace and place the chilled disk of dough and roll it out about ¼ inch (~6 mm) thick. Transfer onto a baking sheet lined with parchment paper.
Beat egg and milk in a small bowl, set aside. Place filling on the dough, leaving a 2-inch (~5cm) border along the edges. Fold the edges, forming pleats around the dough. Using the egg wash, lightly brush the folds. Bake for about 25 minutes or until golden brown.
